Jamaican Beef Patties - How To Make Them

These patties are made with flaky pastry and they can be found all over Jamaica, including canteens, cafes, or roadside food stalls. The highly seasoned beef filling makes them extra delicious. Jamaican patties are easier to make than traditional ones and you can serve them in a bun or with hot homemade gravy poured over the top. The following recipe makes twelve.

1 teaspoon turmeric or curry powder 4 cups all purpose flour 1 cup very cold water, plus extra 1 teaspoon salt 1 1/3 cups cold vegetable shortening 1 egg mixed with 1 tablespoon water

1 teaspoon allspice 2 lbs ground beef 2 tablespoons ketchup 2 tablespoons vegetable oil 1/2 teaspoon black pepper 1/2 cup finely sliced green onions 2 cups water 1 tablespoon minced fresh thyme 1 cup diced onion Minced hot pepper and salt, to taste 2 teaspoons minced garlic

How To Make Them:

First, prepare the dough. Combine the flour, turmeric, and salt in a bowl, and then rub in the shortening with your fingertips. Pour in half a cup of the cold water and mix it using your fingers. Keep adding cold water until you get a dough.

At this point, you can either cut the dough into two pieces, wrap them in plastic wrap and chill them for half an hour or just cut out twelve pieces and put them on a baking sheet. Cover them with plastic wrap and chill them for half an hour.

Combine the ground beef with black pepper and allspice. Saute the onions in a pan with the oil until they are translucent, and then stir in the garlic, thyme, and hot pepper. Keep cooking for another minute, and then add quarter of a teaspoon of salt. Add the beef and stir it well, breaking up any clumps. Cook the meat until there is no pink left in it. Add the ketchup and maybe some more salt if you think it needs it.

Pour in two cups of water. Bring the mixture back to a boil, stirring it well, and then turn down the heat and simmer until most of the liquid evaporates and the rest has become a thick sauce. Stir in the green onions. Take the beef mixture off the heat and let it cool. Beat the egg with a tablespoon of water to make an egg wash. Preheat the oven to 350 degrees F.

If your dough is in two pieces, roll out one of them to make a big circle and cut out three circles using a five inch diameter bowl. Put three generous tablespoons of the filling in half of each ring and moisten the edges of the circle with water. Press them closed then crimp the edges with a fork. Trim off any extra dough. Repeat this until you have filled all the patties.

If your dough is already in individual pieces, roll each one out into a five inch circle. Put three generous tablespoons of the filling in each one, moisten the circle edges with water, and close them.

Crimp the edges with a fork. Arrange the patties on a parchment paper-lined baking tray. Brush the egg wash over the patties and bake them for half an hour or until they are golden brown. Let them cool for ten minutes on wire racks then serve them warm.
