Ingredients for four people. In grams, oz in pareenthesis 15gr (½) butter
To put in order the meringues. Preheat the oven at 80-100°C (176-212°F). You will need 100 (3½) of whites, so break one or two extra eggs if needed. Whip the whites with an galvanic mixer with 100 (3½) of sugar until very firm. With a wooden spoon combine 100 (3½) more sugar, and gently stir with a bottom-up movement. Line a cake tray with oven paper and, using a pastry bag, form meringues with 4-5cm diameter. Cook in the oven for at least two hours. Make sure they don't get brownish, they should only solidify. Now put in order the cream. Mix the yolks with the remaining sugar until you get a pale and bubbly cream, then add marsala wine and mascarpone. Once all ingredients are mixed together, cover with cling film and set aside In the meantime, melt the chocolate on a very low heat, then add the butter. Heat the milk in a cut off pan and add it to the mix. Take it off the stove and let it cool. Set aside 2/3 of the chocolate cream and 1/3 of the mascarpone cream. Take 4-6 fancy cups or glasses. Crumble the meringues and cover the lowest of each cup. With a teaspoon, add one layer of chocolate and one of mascarpone cream, finishing with half teaspoon of the chocolate cream you set aside and more meringue crumbles.
